Happy Thursday!! We have almost made it to the weekend..cheers to that!
Just thinking about this recipe has me drooling. It is the perfect Summer dish since it is light and refreshing. I love eating seafood, especially salmon and tilapia. I don’t mind eating plain Salmon, but I do like to spruce it up every now and then. That’s where this Blueberry Balsamic Herbed Salmon comes in the picture. I found a similar recipe on Pinterest and tweaked it to make it my own. If you love Salmon and blueberries…this will win your heart. For those of you who are not so domestic, this recipe is pretty easy to make!
1 pound fresh salmon fillet
1 pinch of brown sugar
1/4 cup balsamic vinegar
2 cups of frozen blueberries
1 tablespoon maple syrup (I used the sugar free version)
Pre-heat oven to 375 degrees.
Rinse the salmon and place on a foil lined baking dish.
Sprinkle the salmon with Italian seasoning, oregano, parsley, and cilantro until the salmon has a thin herb coating.
In a pot, add the balsamic vinegar, blueberries, maple syrup and brown sugar. Cook for about 5 minutes on medium heat or until the blueberries have soften/melted.
Once the mixture is ready, pour almost all of it over the salmon. Leave a little to put on the salmon after it has cooked.
Cook the salmon for 25-30 minutes. Check to make sure the salmon is fully cooked all the way through. The fish will flake with a fork if it is finished.
Thank your furry sidekick for being your sous chef.
Once the salmon is cooked, add the remaining blueberry sauce and sprinkle with fresh basil.
Serve with your vegetable of choice.
