Mexican food is my favorite type of food. Give me fajitas, guacamole, chips and salsa with a Dos Equis and I am in HEAVEN. I could seriously eat this meal every day and not get sick of it. This is where my Deconstructed Taco Bowl comes into the picture. This is a healthier version of what I love and you can add whatever you like to it! Great, easy and a tasty recipe for the week with a lower carb count.
Ingredients I used:
2 packages of extra lean ground turkey
1 can organic fat free refried black beans
Shredded ice berg lettuce
1/2 chopped white onion
2 packages reduced sodium taco seasoning
1 can diced green chilies
Mexican blend cheese
Wrights of Texas Fresh Green Salsa
**Note: You can easily half this recipe by using 1 package of extra lean ground turkey and 1 taco seasoning packet. I make this double since my husband can finish this whole recipe in a day!
- Brown the meat and drain excess fat. Add taco seasoning packages and add water according to the package.
- Add onion and green chilies to the meat mixture and mix well.

By the way, this salsa is one of my favorites! It has fresh avocado in it and is gluten free. If you live in Houston, you can find this at HEB. If not you can pick you favorite salsa (red or green) and add avocado.
The great thing about this recipe is that it is totally customizable. If you don’t like refried black beans, you could use normal refried beans or plain black beans. You could add corn, sour cream, avocado, jalapeños and the list goes on!
This is a crowd pleaser in my house! Try to not inhale. 🙂
