Bring on the fall! Too bad I live in Texas and it is still a million degrees outside. Since it doesn’t feel like fall yet, I thought I would bring fall to me. I have already loaded up on pumpkin scented candles, had my first Pumpkin Spice Latte of the season and have been buying fall clothing in hopes of cooler temperatures soon! I have made a similar recipe to this one before but knew I had to make this as soon as I saw it on Pinterest just because it has pumpkin in it. Pumpkin Addict. Let me tell you, it does not disappoint! Another easy and healthy recipe that will be a staple in my household.
Adapted from Stilettos and Diapers
1 cup of pumpkin
2 cups of oats, not cooked
4 Tbsp maple syrup (I used sugar free)
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp vanilla extract
1 Tbsp ground flaxseed
1/2 cup natural peanut butter
1 cup chopped walnuts
1/2 cup dark chocolate chips
- Mix all ingredients in a large mixing bowl. Cover the bowl and let the mixture chill in the refrigerator at least 30 minutes.
- Once chilled, roll the balls into whatever size you desire.
